
Cook 4 slices applewood-smoked bacon in a large pot; remove and set aside. To the pot, add 2 garlic cloves, minced, and 1 cup each diced onion, chopped celery, chopped carrot, and chopped potato (skin on). Cook over medium heat 5 minutes. Add 16 ounces clam juice and 3 cups 1% milk. Reduce heat; simmer until vegetables are tender. Add two 6-1/2-ounce cans clams with their juice. Mix 1/2 cup whole wheat flour with 1 cup 1% milk; add to soup. Simmer 2 minutes. Season with salt and black pepper to taste. Top with crumbled bacon and chopped parsley. Makes 4 servings. Serve with a small whole wheat biscuit.

I should have read the above comment before making this...it was just awful :( It had no taste, except that of the whole wheat flour. In an effort to save the chowder, I ran down to the local market and grabbed another 10 oz can of clams, some fat free half & half and seafood flavor boost. But unfortunately it just became a more expensive meal for my trash can. I can almost always doctor a dish up to make it more palatable, however this was one of the worst recipes I have ever tried :(
2/20/2013 06:51:46 AM Report AbuseThis was really thick, but I thought it was good! Especially for a 500 calorie dinner, it was very hearty and a nice, creamy dinner on a chilly fall/winter evening. It was also really quick to throw together and pretty cheap to make so I was happy with this one.
