Make sure to reserve a portion of the peaches as you puree the mixture so the pops will be packed with icy cold, chunky bits of fruit. For a grown-up twist, try adding 1 to 2 teaspoons finely chopped fresh mint, lemon verbena or basil.
Ingredients
1 1/4
pounds
ripe peaches, (3-4 medium), halved and pitted
1/4
cup
freshly squeezed orange juice
1/4
cup
sugar, or to taste
1/4
teaspoon
vanilla extract
Directions
1.
Coarsely chop peaches in a food processor. Transfer 1 cup of the chunky peaches to a medium bowl. Add
lemon juice, orange juice and sugar to taste (depending on the sweetness of the peaches) to the food processor. Puree until smooth. Add to the bowl with the chunky peaches and stir in vanilla.
2.
Divide the mixture among twelve 2-ounce or eight 3-ounce freezer-pop molds (or small paper cups). Freeze until beginning to set, about 1 hour. Insert frozen-treat sticks and freeze until completely firm, about 1 hour more.
Tip:
MAKE AHEAD TIP: Store in the freezer for up to 3 weeks. | Equipment: Twelve 2-ounce or eight 3-ounce freezer-pop molds, or small paper cups with frozen-treat sticks

3/30/2011 10:04:45 AM Report Abusefrom a Google search - 15 calories per teaspoon, 12 teaspoons in 1/4 cup. That'd be about 180 calories divided between all pops. For Diabetics if you want to avoid added sugar but still want to add sweetener try Truvia (a natural sweetener made from the Stevia plant.)

6/16/2010 03:53:20 PM Report Abuseyou could just leave off the sugar and enjoy the natural sweetness of the fruit. 1/4 cup of sugar is 60ish calories, and that's spread through 12 servings, better than eating fake chemifood like splenda!
5/29/2010 05:53:00 PM Report AbuseTry substituting Splenda or Truvia...you might even shave off a few more calories without sacrificing taste!
