BBQ Chicken Sandwich

Toss leftover cooked chicken with barbecue sauce and crunchy carrots for a quick and healthy lunch.

1/2 cup  shredded cooked chicken
1/4 cup  shredded carrots
2 tablespoons  barbecue sauce
2 teaspoons  light ranch dressing
1   small whole-wheat sandwich bun
1 leaf  romaine lettuce
1. Combine chicken, carrots and barbecue sauce in a bowl. Spread ranch dressing on the bun. Top with the chicken mixture and lettuce.

I was looking for healthy quick lunch time ideas to have at work and this one was great! I bought a whole chicken at the grocery store, substituted the bun for sandwich thins and assembled it in less than 5 minutes at work. It was easy, and tasted delicious!
