Confetti Beef Tacos

Makes: 4 servings

Ingredients:
4 packaged taco shells
1/4 pound lean ground beef
1/2 teaspoon chili powder
Dash of salt
1/4 cup Valerie's Pico de Gallo Salsa (recipe below)
1/4 11-ounce can of corn, drained
1 tablespoon each shredded lettuce, low-fat cheddar, diced tomatoes

Heat taco shells as directed. Brown ground beef over medium-high heat until thoroughly cooked; drain. Stir in chili powder, salt, salsa, and corn; heat. Spoon beef filling into shells; top with lettuce, cheese, and tomatoes.

Pico de Gallo Salsa
1/2 medium tomato
1/4 cup cilantro
1-2 scallions
1 jalapeno pepper
1/2 clove garlic
1 teaspoon lime juice
Dash salt and pepper

Dice first five ingredients; toss with lime juice, salt, and pepper in a bowl.

Nutrition facts per serving: 153 calories, 10g protein, 14g carbohydrate, 7g fat (3g saturated), 2g fiber
