Orange and Olive Oil Chocolate Chip Cookies

Ingredients

  • 1/2 cup  extra-virgin olive oil
  • 1 stick melted butter
  • 1 teaspoon  orange zest
  • 3/4 cup  dark brown sugar
  • 3/4 cup  sugar
  • 2 eggs
  • 3/4 teaspoon  vanilla extract
  • 3/4 teaspoon  baking soda
  • 2 1/4 cups  white whole-wheat flour
  • 1/2 teaspoon  fine sea salt
  • 10 ounces  chocolate chips

Directions

1. Preheat the oven to 375 degrees . Line two baking sheets with parchment paper. In a large bowl, stir together olive oil, melted butter, orange zest, and sugar; beat with a wooden spoon until well combined. Stir in eggs and vanilla extract. In a medium bowl, whisk together flour, 3/4 teaspoon baking soda and sea salt; stir dry ingredients into olive oil mixture, then stir in chocolate chips. Scoop 1 heaping tablespoon dough onto each prepared baking sheet; repeat with remaining dough, spacing cookies about 3 inches apart. Bake until cookies are set, about 10 minutes, rotating sheets halfway through. Remove cookies from oven and let cool 2 minutes, then transfer to a wire rack to cool completely.
