Fruit and Seed Oatmeal Cookies

Makes: 24  servings

Ingredients

  • 1/2 cup  unsweetened applesauce
  • 1/2 cup  canola oil
  • 1/2 cup  fig paste (available at earthy.com)
  • 1/2 cup  Agave nectar (such as Wholesome Sweetener's, available at amazon.com)
  • 4 egg whites (from large eggs)
  • 1 teaspoon  vanilla
  • 2 cups  whole wheat flour
  • 1 teaspoon  baking powder
  • 1 1/2 teaspoons  cinnamon
  • 3 cups  rolled oats
  • 1/4 cup  golden raisins
  • 1/4 cup  dried unsweetened cranberries
  • 1/4 cup  sunflower seeds (shelled/ unsalted)
  • 1/4 cup  pumpkin seeds (shelled/ unsalted)

Directions

1. Preheat oven to 375 degrees F

2. In a bowl mix applesauce, canola oil, fig paste and agave until smooth. Add egg whites and vanilla. In another bowl mix flour, baking powder, and cinnamon. Add to egg mixture, mixing just until incorporated. Stir in oats, fruit, and seeds. Spray a cookie sheet with non-stick cooking spray. Drop tablespoon sized balls of dough on tray, about 2 inches apart, press down lightly. Bake for 8-10 minutes (until edges begin to brown). Remove from baking tray and place either on a cooling rack or paper towel; cool for 5 minutes.
