White Bean-Pesto Bruschetta

Makes: 1  servings


  • 1/4 cup  drained, rinsed white beans
  • 1 tablespoon  diced tomato
  • 3/4 teaspoon  prepared pesto
  • Pinch of salt
  • 1 large slice whole-wheat baguette, toasted
  • 1/2 small garlic clove


1. In a bowl, combine the beans, tomato, pesto and salt. Mash together with a fork. Lightly rub the toast with the cut side of the garlic. Spread the beans onto the toast. (Bean mixture can be refrigerated for up to 2 days.)
