Tuna and Chickpea Salad

Makes: 1  servings


  • 1/4 cup  chickpeas, drained and rinsed
  • 2 tablespoons  drained chunk light tuna in water
  • 1 tablespoon  minced roasted red pepper
  • 1 tablespoon  minced red onion
  • 1 1/2 teaspoons  lemon juice
  • 3/4 teaspoon  olive oil


1. Combine all ingredients in a bowl. Use a fork to lightly mash the salad together. Serve with whole-wheat crackers or pita bread.
