Vegetable Beef Barley Soup

Makes: 4  servings Prep 20 mins Cook 1 hr 15 mins

Ingredients

  • 12 ounces  lean beef
  • 1 tablespoon  vegetable oil
  • 4 cups  low-sodium beef broth
  • 1 cup  chopped onion
  • 1/2 cup  chopped celery
  • 1 teaspoon  oregano
  • 1/4 teaspoon  pepper
  • 2 cloves minced garlic
  • 1 cup  frozen veggies
  • 1 14 1/2ounce can diced tomato
  • 1/2 cup  quick-cooking barley

Directions

1. Saute lean beef in vegetable oil; drain fat.

2. Add broth, onion, celery, oregano, pepper and garlic. Cover; simmer 1 hour.

3. Add frozen veggies, diced tomato and barley. Cover; simmer 15 minutes. Makes 4 servings.
