Cucumber With Peanut Sauce
Ingredients
- 1 tbs. natural reduced-fat creamy peanut butter
- 1 tbs. chicken stock
- 1 tbs. soy sauce
- 1 tbs. honey
- 1/2 tsp. fresh lime juice
- 1/4 tsp. Asian sesame oil
- 1/4 tsp. minced garlic
- 1 medium cucumber, peeled and cut into spears
Directions
Combine all the ingredients except the cucumber; stir until smooth. Serve with the cucumber spears for dipping. (Sauce can be refrigerated for up to 3 days.)
