Broccoli and Cheddar Soup
Makes: 4 servings

Ingredients
- 5 tablespoons unsalted butter
- 1 large onion, finely chopped
- 1/2 cup all-purpose flour
- 4 cups chicken stock or water plus 1 bouillon cube
- 2 cups grated reduced fat cheddar cheese
- 3 cups steamed broccoli florets, finely chopped
- 1/4 teaspoon paprika, optional
Directions
1. Melt the butter in a medium saucepan over medium-high heat.
2. Add the onion, and cook, stirring, for 3 minutes.
3. Add the flour and cook until golden, 1 to 2 minutes more.
4. Stir in the cheese and stock, and simmer until thickened, 5 to 10 minutes.
5. Stir in the broccoli and cook until heated through.
6. Season with salt, pepper, and paprika, if desired.








I just made this... the entire recipe is definately there. It came out great!!

The only real fat-containing ingredients should be the butter and cheese (assuming you use fat-free stock). A tbl of butter is about 12 grams of fat and a half-cup of shredded cheese is about 4, for a total of 16 grams of fat; not sure how they got 27 grams per serving.
