View Nutrition Facts
Ingredients
- 4 ounces salmon
- 3 ounces dry whole-grain penne pasta
- 1 1/2 cups frozen broccoli florets
- 1 tablespoon butter, melted
- 4 tablespoons low-sodium vegetable broth or water
- 1 lemon, zested and juiced
- 1 garlic clove, minced
Directions
1. Broil or grill salmon for about 8 minutes per inch of thickness. Cook pasta according to package directions. Heat broccoli in microwave until warm, about 4 minutes. Whisk together melted butter, broth or water, lemon zest and juice, and garlic. Toss penne with broccoli and place cooked salmon on top. Drizzle lemon-butter sauce over all.

This needs some spices or something. The lemon on its own isn't a very exciting flavor.

1/5/2010 11:35:13 AM Report AbuseThis was very tasty! I agree with the PP, though, a whole lemon in the sauce made it very strong. I liked it, but my daughter didn't quite care for the sauce because of that. Next time, I will squeeze the lemon over the salmon before cooking and only use 1/2 of the lemon in the sauce. Overall: Pretty good and not too hard!
