Salmon and Spinach Salad with Hard-Boiled Egg

  • 5 cups  baby spinach
  • 4 ounces  cooked salmon fillets, flaked
  • 2 hard-boiled eggs, peeled and chopped
  • 2 tablespoons  extra virgin olive oil
  • 2 teaspoons  freshly squeezed lemon juice
  • 1/2 teaspoon  kosher salt
  • Freshly ground black pepper


1. Combine all of the ingredients in a bowl, and toss well to combine.

2. Serve.

I agree with Anonymous!! Salmon and Spinach with hard boiled egg is the Bomb Combo!!!!!!!! I have been eaten it for about 3 years and it helps me stay lean at 52 soon to be 53. (No Mid-life belly)
