Ingredients
- 1/2 cup black beans
- 1/2 cup chopped bell pepper
- 1/2 cup chopped onion
- 1 jalapeno
- 2 teaspoons olive oil
- Brown rice
- 1/4 avocado
Directions
1. Cook 1/2 cup each black beans, chopped bell pepper and chopped onion and 1 chopped jalapeno in a pan with 2 teaspoons olive oil for 5 minutes. Place over cooked brown rice; top with 1/4 avocado, sliced.
