Pinto Bean Tacos
Ingredients
- 1/2 cup canned pinto beans, rinsed and drained
- 1 lime, juiced
- 1/4 teaspoon cumin
- 1/4 teaspoon chile powder
- 2 whole-grain tortillas
- 1 cup shredded romaine lettuce
- 1/2 cup chopped tomato
- 1/4 avocado, chopped
Directions
In a microwave-safe bowl, warm beans, lime juice, cumin and chile powder. Put bean mixture into tortillas and top with lettuce, tomatoes and avocado.

5/13/2011 07:22:50 PM Report AbuseThis is one of my go-to recipes when I don't feel like cooking! However, I find it doesn't make enough to feel like dinner, so sometimes if I want more than 2 tacos, I'll make a little more, and skip the avocado.
11/2/2010 05:52:35 PM Report AbuseThis was very, very good! Super easy. The whole lime was a bit much, but as long as you drain it from the beans after warming, it gives it a really nice flavor. I ate this as a salad with a tortilla on the side and used some of the juices from the lime, cumin, chile powder mixture as a dressing.
