Chipotle Chili

Ingredients
- 1 tablespoon olive oil
- 1 cup chopped onion
- 2 garlic cloves, minced
- 2 teaspoons ground cumin
- 4 teaspoons chili powder
- 1 tablespoon minced (canned) chipotle in adobo sauce
- 1 pound lean ground beef (optional)
- 1 14 1/2ounce can diced tomatoes
- 1 19 ounce can red kidney beans, drained and rinse
Directions
1. Heat the oil in a Dutch oven over medium-high heat.
2. Add the onion and garlic; cook 4 minutes, stirring occasionally, until onion is softened.
3. Add the cumin, chili powder, chipotle and beef (if using); cook 5 minutes, stirring to break up the meat, until browned.
4. Add diced and crushed tomatoes and kidney beans; cook until chili is thick, 12 to 15 minutes.








In the magazine, there is an additional ingredient: 14.5 ounce can crushed tomatoes
6/15/2011 04:41:09 PM Report AbuseThere's an error in the recipe! We made this yesterday and it is good, but I think it needs a large can (28 oz. or so) of crushed tomatoes that is not mentioned in the list of ingredients.
