Katie loves experimenting in the kitchen to create nutritious and flavorful dishes.

Do you ever crave waffles drizzled with syrup, cheeseburgers with all the fixings or red velvet cake? Maybe a better question is “who doesn’t?” Katie at Dashing Dish has a knack for taking calorie-packed recipes and making guilt-free versions that taste just as decadent, which is why she’s landed on our bookmarked reading list! Here’s what keeps her moving and motivated.

My favorite way to work out: A combination of weight training and interval/HIIT (high intensity interval training).

5 things I can’t live without:

  1. My husband
  2. My family and friends
  3. My Pomeranian Zoey
  4. My Bible
  5. My Nike tennis shoes

I’m happiest when I’m: In my pajamas at night cuddled up with my husband watching movies!

My fave fit snack: One of my protein shake or protein muffin recipes!

My gym bag must-have: My iPhone (which has a fully loaded iTunes workout playlist) with my armband and headphones.

Of course we had to ask Katie to share one of her favorite recipes! Click below for her 187-calorie cake batter shake—a much lighter take on the treat that can sometimes offer a full day’s worth of calories.

The only thing that could make this look better? A straw.

Cake Batter Protein Shake

Serves 1

  • ½ cup lowfat cottage cheese
  • 1 scoop vanilla protein powder (like Designer Whey protein powder)
  • 3-5 drops almond extract or butter extract
  • 1 tablespoon sugar-free vanilla instant pudding mix OR 1/2 teaspoon vanilla extract
  • 3-5 Stevia packets (or sweetener of choice to taste)
  • ½-1 cup water
  • 5-10 ice cubes
  • Optional: Sprinkles for topping!

Put everything into a blender and blend, adding as much water and ice until your desired, creamy consistency is reached. Top with sprinkles if desired, and enjoy!

She posts loads of healthy alternative recipes (like healthier cakes and burgers) and some of her fitness challenges are great too.

    I used a banana to get the same consistency!  Worked out great!  You can also try yogurt that isn’t made from dairy.  Coconut, almond, rice etc.

    You can’t taste the cottage cheese at all, use fat free to lower cals further. Love this drink…..

    I’m in for anything that tastes like cake! Some readers are’nt crazy about cottage cheese. Some suggest low fat Greek yogurt. I’m thinking l.f. Ricotta cheese. I will try this for sure.

    Hoping for healthier recipes coming from a fit blogger. Sugar-free pudding contains aspartame, sprinkles contain food dye. C’mon people! If we’re going to do healthy, do it all the way!

    Freeze some almond milk as ice cubes. This can help replace some. Also is cool whip an option for you? Just an idea

    You read my mind!! It kills me when I see stuff like that, and it’s everywhere!  ”Fit” isn’t really equating to healthy anymore. I actually saw one fitness blogger say that Nutella was a great alternative to peanut butter! :-/

    The one thing I can’t live with out in my gym bag, is an apple, with a baggy of nuts and my Wheybeyond personal size protein packets and a bottle of water to mix it in.     This tasted great! I put about 1/4cup of vanilla soy milk. I drank it after I came home from the gym and used biochem whey protein (vanilla) and threw in some flax seeds.

    I just made this and I would reccomend not using almond or butter extract and just adding more vanilla.

    If you have a good blender, ice crush for 30 seconds, blend for a minute, and whip for 15-30 seconds…you can’t even tell there is cottage cheese in there.
