    Cucumbers Are Good for You!

    Whether you eat them in a salad, soup, or sandwich, cucumbers are a hydrating veggie. They're 95 percent water and a good source of vitamin K, important for blood clotting. They also provide potassium (good for your blood pressure!) and immunity-boosting vitamin C. For your cucumber inspiration, I've put together some of my favorite recipes, including ones from my dietitian colleagues. Enjoy!

    Southwestern Greek Yogurt Dip with Crudités

    I made this nutritious dip made from Greek yogurt when I recently had friends visiting recently pairs up with cucumbers, grape tomatoes, mushrooms, and snap peas. Between the three of us, we ate up almost an entire plate of vegetables! The best part is that we filled up on fiber-rich veggies and protein-rich yogurt—in lieu of more caloric apps like tortilla chips and heavier dips.
