When you've got more fresh fruit than you know what to do with, don't even think about throwing it away. Flash-freeze it instead so you're prepped and ready for future smoothies. Flash-freezing is simply freezing individual pieces of food separately (we recommend spreading the pieces out on a baking sheet or tray). Then as soon as it's frozen, you pack the pieces in airtight containers or freezer bags.

That first step is an important one, especially if you're keeping an eye on portions. Laying out all the fruit on a tray keeps individual pieces of food from fusing together during the freezing process. You'll be able to grab just the amount you need and start blending.

Follow the three steps below for a quick step-by-step tutorial on how to flash-freeze fruit. Gather up a baking sheet or tray (one that fits in your freezer), resealable freezer bags or containers, and fruit, you're ready to go:

How to Flash-Freeze Fruit

1. Wash and dry all the fruit you plan to flash-freeze. Peel, slice, and remove pits if necessary. Line a baking sheet or tray with parchment paper, waxed paper, or plastic wrap. Place fruit on a baking sheet or tray. Make sure the edges do not touch, as this can cause the pieces to fuse together. Place tray in freezer and let fruit fully freeze.

2. Once the fruit is fully frozen, remove the pieces from the baking tray and transfer them to resealable freezer bags or freezer-safe food storage containers. Seal and label the package using a wax crayon or waterproof marking pen, indicating the name of the item, the quantity or size, and the date it was frozen. Return the food to the freezer as quickly as possible.

3. Enjoy your frozen fruit within a year for the best flavor, texture, and overall quality.
