Make Healthy Stuffed Peppers Like a Pro

Looking to impress your friends at your next dinner party? Stuffed peppers are the way to go. They're super easy to make and are packed with healthy benefits.

Research has shown that people who eat more fruits and vegetables are at lower risk for chronic diseases. The Dietary Guidelines for Americans recommend eating vegetables from all groups, including dark green, red, and orange. Peppers are a great source of vitamin C and fiber, meaning they'll help keep you full longer.

This recipe from chef and cookbook author Vicky Bhogal puts an Indian spin on peppers, using garam masala, fresh ginger, coriander, and cumin seeds to add extra flavor. For those who like a spicy kick, you can also add dried red chili flakes. The peppers will come out of the oven gently charred on the outside and filled with a tangy potato-mash that will satisfy even the pickiest eater. Plus, the recipe uses olive oil to add in heart-healthy fats.
