Make This Red, White, and Blue Watermelon Cake for the Fourth of July

Let's face it, typical Fourth of July barbecues and parties are usually all-you-can-eat food fests filled with mayo-laden salads, ice cream, pie, LOTS OF BEER, and slabs of fatty ribs. It's inevitable you're going to indulge a little more than usual—as you totally should! But feeling bloated and uncomfortable in a summer dress is never fun. That's why we always suggest bringing something a little lighter that everyone will enjoy. Sure, fruit salad is always nice, but what if your fruit looked like a red, white, and blue CAKE. Introducing the watermelon cake. Here, I'll show you how to decorate a watermelon in full-out patriotic style—complete with a vegan "frosting" and lots of berries for color.

All you need is a large watermelon, coconut yogurt (or regular, if you don't need it to be vegan and dairy-free), coconut, almonds, bananas, blueberries, strawberries, and raspberries. If you have kids attending your weekend festivities, letting them decorate your watermelon is a great way to keep them out of trouble AND ensure they've had something healthy to eat.
