Ingredients

  • 12 ounces mixed salad greens
  • 1/2 cup dried pitted sour cherries
  • 1 cup grated ricotta salata (available at specialty cheese shops)
  • 16 dried pitted dates
  • 16 dried apricots
  • Dressing:
  • 1 cup raspberry vinegar
  • 1/4 cup red wine vinegar
  • 2 small shallots, peeled and chopped
  • 1 tablespoon Dijon mustard
  • 1/2 tablespoon fresh thyme leaves
  • 1 tablespoon salt
  • 1/2 teaspoon freshly ground black pepper
  • 2 tablespoons honey
  • 1 1/2 cups grapeseed oil
  • 3 cloves garlic, smashed

Directions

  1. In a large bowl, combine greens, dates, apricots and cherries.
  2. In a food processor or blender, combine raspberry and red wine vinegars, shallots, garlic, mustard and thyme. Blend until smooth.
  3. Add salt, pepper and honey. Continue blending and slowly add the oil to emulsify.
  4. Use 1 cup of dressing to dress salad and store remainder, well covered, in the refrigerator for up to 1 week.
