Hot and Sour Soup

Hot and Sour Soup

  • 8 cups purified water
  • 1/2 cup apple cider vinegar
  • 1 tablespoon maple syrup
  • 1 package rice noodles (16 ounces)
  • 2 eggs
  • 1 cup chopped scallions


  1. In a large pot, combine water, apple cider vinegar, and maple syrup.
  2. Over high heat, bring soup to a boil, reduce heat to a simmer, and add noodles.
  3. Allow soup to simmer for about 5 minutes, stirring regularly.
  4. In a separate small bowl, beat eggs. Drizzle eggs into soup and stir to develop egg ribbons.
  5. Add scallions.
  6. Remove from heat and allow to cool.
  7. Consume immediately or transfer soup to a large glass container with a tight-fitting lid. Soup can be stored in the refrigerator for up to 5 days, or in the freezer for up to one month.
