Banana Nut Gazpacho

Ingredients

  • 1 cup raw natural almonds
  • 1 cup raw natural cashews
  • 4 cups unsweetened vanilla almond milk
  • 2 cups kefir
  • 3 bananas, peeled and halved

Directions

  1. Combine almonds, cashews, almond milk, and kefir in a countertop blender.
  2. Blend on high until nuts are broken down and thoroughly combined, about 1 minute.
  3. Add bananas to the blender and blend on high until all ingredients are thoroughly combined, about 1 minute.
  4. Consume immediately or transfer soup to a large glass container with a tight-fitting lid and store in the refrigerator for up to 3 days.
