Mushroom and Asparagus Quiche

  • Preheat oven to 350 degrees F.
  • Whisk together 3 eggs plus 2 egg whites; mix in 1/2 cup chopped asparagus, 1/2 cup chopped mushrooms, and 1/4 cup shredded Swiss cheese.
  • Pour mixture into 6 muffin cups coated with nonstick cooking spray.
  • Bake 20 to 25 minutes, until eggs are set.
  • Eat 3 mini quiches with 1 slice toasted whole-grain bread and an orange. (Save the rest for another breakfast.)

The slide show plan for meals to help lose weight really sounds like something, even I, could follow. So often, meals contain so many ingredients, I lose the initiative to try them. I'm in my 80's so cooking doesn't appeal to me as it once did, so I'm going to try yours. We are getting your magazine (it's in my husband's name).
