Most people put their vegetables out of sight in the crisper drawer of the fridge to keep them fresher longer. But you can forget you have them, which defeats the purpose. Keep your cut-up vegetables out in the open in the main part of the refrigerator for fast, crunchy, healthful snacks. They're also great for making a quick salad, tossing into soups and omelets, or sauteing with garlic.

I really dislike the way you have this article reading. I like page numbers, this is confusing and I probably won't forward to other friends who could use this because it's so confusing. You see the "next" button and I think it's the next story...page numbers are easier to follow.

Cutting vegetables does not deplete any of the nutrients. In fact, some vitamins only become "active" when they are cooked. It's the method of cooking however that will either add unncessary calories or the vitamins will be leaked into the water for example. Steaming is the best way to cook fresh vegetables. If you're looking for a cheaper way to consume veggies, try purchasing frozen veggies. As a poor college student, that is the only way I could consume them without them going bad!

There are four main things in my fridge-- Whole grain bread, soy milk, fruits and veggies. When one buys pretty much nothing but fruits and veggies, it's very easy to consume them.
