Put Them in Front
Most people put their vegetables out of sight in the crisper drawer of the fridge to keep them fresher longer. But you can forget you have them, which defeats the purpose. Keep your cut-up vegetables out in the open in the main part of the refrigerator for fast, crunchy, healthful snacks. They're also great for making a quick salad, tossing into soups and omelets, or sauteing with garlic.

2/2/2012 02:48:31 AM Report AbuseCutting vegetables does not deplete any of the nutrients. In fact, some vitamins only become "active" when they are cooked. It's the method of cooking however that will either add unncessary calories or the vitamins will be leaked into the water for example. Steaming is the best way to cook fresh vegetables. If you're looking for a cheaper way to consume veggies, try purchasing frozen veggies. As a poor college student, that is the only way I could consume them without them going bad!
