Pretzel Chicken with Citrus Sauce & Baked Potato

Make It
Preheat oven to 350 degrees F. Dip one 3-ounce boneless, skinless chicken breast in 1 beaten egg and then in 1/4 cup crushed pretzels. Bake chicken and 1 small potato for about 40 minutes. Whisk together 2 tablespoons orange juice with 2 teaspoons olive oil, 1 tablespoon vinegar and salt and pepper to taste. Drizzle baked chicken with orange sauce and top potato with 2 tablespoons yogurt. Serve with 1 cup steamed broccoli.
