Quick Applesauce

This speedy homemade applesauce is fabulous with potato latkes or as a healthy snack for kids.

Ingredients
4   McIntosh apples, peeled and chopped
1 tablespoon  brown sugar, or more to taste (optional)
Pinch of  cinnamon
Directions
1. Place apple pieces in a medium microwaveable bowl. Cover and microwave until softened, about 4 minutes. Transfer to a food processor, add brown sugar, if using, and cinnamon and puree until desired consistency.
Nutrition Facts
Calories 9, Carbohydrate 2 g, Potassium 16 mg.
Percent Daily Values are based on a 2,000 calorie diet

My main objection to t is recipe is t he use of Macintosh apples.. the are only fit to eat when they are almost green.. they turn to mush as they get riper. What about Johnathan Apples. They are nice firm apples, good for eating and cooking.

To make this healthier skip peeling the apples and adding extra sugar. Most apples are sweet enough on their own and heating fruit also brings out more natural sweetness. The peels give you more fiber / vitamins and also gives the applesauce a cute pinkish hue.

The apples are going to cook down but there are about 60 calories per serving of fruit - in this case one apple. But 1/2 cup of applesauce would count as one serving, and thus be counted as 60 calories. There are 9 calories per gram of fat - maybe that's what you were thinking of. Fruit is only carbohydrates though - no fat.

JoJo.... not certain, but one would expect that there are more than 2 servings. I would imagine this is more like 1/2 cup servings out of the total of 2 cups yield. That said, I would still have a problem with the caolorie count of 9 per serving. Normal servings would be 1/2 cup, so I would now assume the serving size is a mere 1/2 cup.
