Make-Ahead Meals: Freezer-Friendly Recipes

Cook these meals on the weekend (or whenever you have time) and pop them in the freezer to have dinner ready in minutes on your busiest nights.

Veggie Lasagna

This low-calorie, low-fat lasagna recipe will satisfy any comfort-food craving and makes 6 servings -- so you can eat some now and have plenty left over for the rest of the week.

Note: Remember to divide cooked foods into small portions in shallow containers. As a general rule, divide soups and stews into portions that are two to three inches deep, and stir them while cooling to speed the release of heat. Place directly in the refrigerator, then transfer to the freezer once they're cold.
