This looks yummy. Bet I could do this on my George Foreman grill and grill both sides at the same time. Then put is under the broiler until the cheese melts.
I disagree, the fat is not the problem in these recipies, it's the lack of protein. If you ate this routine for a week you'd have too many carbs and not enough protein.
What is your criteria for healthy? I was surprised by how much fat was in most of these dishes. 29g of fat for 333 calories for a stuffed eggplant or 22 Cals for grilled vegetables seems high to be considered healthy.
