Salmon and Spinach Salad with Hard-Boiled Egg

Makes: 4 servings

5 cups baby spinach
4 ounces cooked salmon fillets, flaked
2 hard-boiled eggs, peeled and chopped
2 tablespoons extra virgin olive oil
2 teaspoons freshly squeezed lemon juice
1/2 teaspoon kosher salt
Freshly ground black pepper

  • Combine all of the ingredients in a bowl, and toss well to combine.
  • Serve.
