Apricot-White Chocolate Chip Cookies

Yield: 24 cookies


  • 3/4 cup  margarine
  • 1 cup  Splenda
  • 1 1/2 teaspoons  vanilla
  • 1 egg
  • 1 cup  all purpose flour
  • 2/3 cup  whole wheat flour
  • 1/2 teaspoon  baking soda
  • Pinch of salt (optional)
  • 3/4 cup  dried apricot, chopped
  • 3/4 cup  white choc chips


1. Cream the margarine and Splenda. Beat in the vanilla and egg. Mix in the flour, salt and baking soda. Mix in the apricots and white chocolate chips. Using a tablespoon, spoon the batter onto a cookie sheet lined with parchment paper. Bake at 325 degrees F for about 10 minutes or until light brown.
