Cucumber With Peanut Sauce

Makes: 1  servings


  • 1 tablespoon  natural reduced-fat creamy peanut butter
  • 1 tablespoon  chicken stock
  • 1 tablespoon  soy sauce
  • 1 tablespoon  honey
  • 1/2 teaspoon  fresh lime juice
  • 1/4 teaspoon  Asian sesame oil
  • 1/4 teaspoon  minced garlic
  • 1 medium cucumber, peeled and cut into spears


1. Combine all the ingredients except the cucumber; stir until smooth. Serve with the cucumber spears for dipping. (Sauce can be refrigerated for up to 3 days.)
