Curried Turkey With Rice


  • 2 teaspoons  olive oil
  • 12 ounces  lean all-white-meat ground turkey
  • 1 teaspoon  curry powder
  • 1/2 cup  canned diced tomatoes, drained
  • Cooked basmati or jasmine rice
  • Reduced-fat plain yogurt
  • Snipped fresh cilantro


1. Rub oil in a heavy skillet. Heat skillet to medium-high heat.

2. Brown turkey (5 to 7 minutes); stir in curry powder and diced tomatoes.

3. Simmer 3 to 5 minutes more; serve over cooked rice.

4. Top with plain yogurt and fresh cilantro.
