Gluten-Free Recipes: Breakfast

SuperFoodsRx Granola
Gluten alternative: Gluten-free oats

Makes: 8 servings
Prep: 10 minutes
Cook: 20 minutes

Ingredients
1/2 cup gluten-free oats
1/2 teaspoons canola oil
1/2 tablespoons honey
2 tablespoons chopped walnuts
1/8 cup dried blueberries
1/2 teaspoon cinnamon
1 teaspoon pure vanilla extract

Directions
1. Preheat oven to 300 degrees. In a bowl, mix together ingredients in the order listed, thoroughly combining after each addition.
2. Spread mixture on a jelly roll pan sprayed for 2 seconds with cooking spray and bake for 20 minutes, stirring every 5 minutes. Bake until oats are a golden brown.
3. Cool and store in an airtight container or resealable plastic bags. Enjoy with low-fat yogurt or skim mill.

Variation: Substitute sliced almonds for walnuts and dried cranberries for blueberries.

Hint: Heating the honey in the microwave oven for 810 seconds before adding makes it easier to incorporate when blending the ingredients.

The author should really learn all the facts about a gluten free diet. Celiac disease is NOT the only disease affected by gluten. There are other autoimmune diseases that are affected as well (i.e. RA,MS) This article can be very misleading to someone who hasn't done their research. Maybe if the author(s) suffered through an autoimmune disease they would be more understanding. RESEARCH, RESEARCH, RESEARCH!!!

This article is not one bit misleading! Gluten as it is highly processed in our country is bad... Period!! I am 53 and chose to try gluten free and it has changed my life. No more occasional stomach pain, no more hot flashes, no more night sweats, diminished joint pain. Our foods in this country are so highly processed it truly disgusts me. We are so educated on what is healthy yet one of the most obese and unhealthy countries in the world.
