White Bean-Pesto Bruschetta
Ingredients
- 1/4 cup drained, rinsed white beans
- 1 tablespoon diced tomato
- 3/4 teaspoon prepared pesto
- Pinch of salt
- 1 large slice whole-wheat baguette, toasted
- 1/2 small garlic clove
Directions
In a bowl, combine the beans, tomato, pesto and salt. Mash together with a fork. Lightly rub the toast with the cut side of the garlic. Spread the beans onto the toast. (Bean mixture can be refrigerated for up to 2 days.)
