Avocado and Black Bean Wraps

Ingredients

  • 1/2 cup canned black beans, rinsed and drained
  • 1/4 teaspoon cumin
  • 2 tablespoons salsa
  • 2 whole-grain tortillas
  • 1/4 avocado, chopped

Directions

Mix black beans, cumin and salsa. Fill tortillas with bean mixture and chopped avocado.

I found a similar recipe on good housekeeping magazine-they added grated carrots, chopped green pepper & onion. I tried it this way, sauted the pepper & onion, then added cumin, black beans and carrots. I put a small amount of grated low fat cheddar on my wrap, added my bean mixture then folded it in half and grilled like a quesadilla. Served it with salsa and sour cream. It was delicious. Husband had seconds.

brandio514-try subbing 2 Tbs. diced or crushed tomatoes and cayenne pepper to your taste or (if you don't like the tomato thing same as salsa) add some chopped onion and a squeeze of lime.
