Watermelon Soup With Fresh Mint

Ingredients

  • 4 cups  diced seedless watermelon
  • 2 tablespoons  freshly squeezed lemon juice
  • 2 tablespoons  freshly squeezed lime juice
  • 1 tablespoon  chopped fresh mint
  • 1 tablespoon  honey
  • 1/4 teaspoon  ground ginger (optional)

Directions

1. In a blender, puree all ingredients until smooth. Chill. Garnish with additional fresh mint, if desired.
