Pumpkin Soup

  • 2 slices bacon, chopped
  • 1 onion, chopped
  • 1 29 ounce  can pumpkin
  • 3 1/2 cups  low-sodium chicken broth
  • 1 cup  applesauce
  • 2 teaspoons  ground ginger
  • 1/2 cup  light sour cream
  • salt
  • pepper


1. Saute 2 slices chopped bacon and 1 chopped onion; drain fat.

2. Add one 29-ounce can pumpkin, 3-1/2 cups low-sodium chicken broth, 1 cup applesauce and 2 tsp. ground ginger.

3. Add salt and pepper; bring to boil. Simmer.

4. Add 1/2 cup light sour cream. Makes 4 servings.

omg i loved this! i didn't have any applesauce on hand, so i cooked and pureed 2 fugi apples and added some splenda to sweeten it. also, i made it vegetarian and put in veggie broth and skipped the bacon! delish!

Sooo good! I doubled bacon, added a clove of minced garlic, 1/2 teaspoon cayenne. I think maybe a 1/3 less onion would be better also. I left off the sour cream, it was good without, and added a piece of rosemary italian bread.
