Tuna and Chickpea Salad

Ingredients

  • 1/4  cup chickpeas, drained and rinsed
  • 2  tbs. drained chunk light tuna in water
  • 1  tbs. minced roasted red pepper
  • 1  tbs. minced red onion
  • 1 1/2  tsp. lemon juice
  • 3/4  tsp. olive oil

Directions

Combine all ingredients in a bowl. Use a fork to lightly mash the salad together. Serve with whole-wheat crackers or pita bread.
