BBQ Salmon with Greens and Sweet Potato

Ingredients
- 4 ounces salmon
- 2 tablespoons barbecue sauce
- 1 garlic clove, minced
- 3 cups chopped kale
- 2 teaspoons olive oil
- 1 small sweet potato
- 2 teaspoons maple syrup
- Dash of cinnamon
Directions
1. Broil or grill salmon 8 minutes per inch of thickness, and brush with barbecue sauce. Saute garlic and kale in oil for 6 minutes, or until tender. Wash potato, prick it 2 or 3 times with a knife, and microwave for 10 minutes, turning once.
2. Top with maple syrup and cinnamon. Serve salmon on greens with potato on the side.








i really like the simplicity of this recipe. anyone can do it and enhance it if they wish. it's extremely nutritious and satisfying.
