Egg-White Muffin Melt

  • 3 egg whites
  • Whole-grain English muffin
  • 1/2 cup  spinach
  • 1 slice reduced-fat cheddar cheese
  • 1 slice tomato


1. Scramble 3 egg whites.

2. Cover half of a whole-grain English muffin with 1/2 cup spinach and the other half with 1 slice reduced-fat cheddar cheese; toast until cheese is melted.

3. Add egg and 1 slice tomato.

I make this with light english muffins (100cal) 2 egg whites (50cal) and a fat free cheddar slice (25cal). Mine comes out to 175 calories. The tomato slice & spinach are minimal and not counted.
