Parmesan Rice Cakes
- 2 brown rice cakes
- 1 teaspoon tomato paste (optional)
- 2 teaspoons grated Parmesan cheese
- Black pepper
1. Spread rice cakes with the tomato paste, if using, sprinkle with cheese, and season with pepper. Toast in a toaster oven or broiler, watching very carefully (these cook fast) until the cheese is melted. Let cool.
