Spinach and Goat Cheese Flatbread Pizza

Ingredients
- 2 whole-grain flatbreads
- 1/2 cup pizza sauce
- 2 tablespoons dried oregano
- 1 cup baby spinach
- 1/4 cup goat cheese
- 2 tablespoons pine nuts
Directions
1. Preheat oven to 350 F. Bake flatbread for 7 minutes. Spread pizza sauce on flatbread and top with oregano, spinach, goat cheese and pine nuts. Bake an additional 12 to 15 minutes.









I added chopped Red Pepper. the sweetness of the red pepper compliments the Spinach.

Carbs, Fats, etc: These are HEALTHY ingredients...the portion may be a bit generous (although I'd probably eat the whole thing...lol), but there is comparing this pizza to any fast food pizza... especially for the flavor vs excess fat, salt, etc.
5/10/2012 03:34:48 PM Report Abusealexiw90 - great tip, especially during heirloom tomato season. to those who think this recipe isn't healthy - want to echo fit430 (?) and others - it's the type of fat that counts. also, notice that it has 20 grams of fiber - pretty much a whole day's worth! am going to try this next week.
