Lemon Basil Pasta With Summer Squash

Ingredients
- 2 ounces (2/3 cup) dry whole-wheat penne
- 1/2 cup chopped zucchini
- 1/2 cup chopped yellow squash
- 1/2 cup canned white beans, rinsed and drained
- 1 lemon, juiced
- 1/4 cup chopped fresh basil
- 1 tablespoon Parmesan cheese
- 1 tablespoon olive oil
Directions
Make it:1. Boil pasta and drain. Toss with remaining ingredients.









When I went to go make this recipe I didn't realize that it wasn't all cooked. So, I went and sauteed the squash and zucchini then added the lemon juice to the squash. I then added the beans and heated it on low until it was heated all the way through. I then added the basil and the cooked pasta to the pan. I mixed it up and the beans kind of squished-making a creamy bean/lemon sauce for the pasta. I then put it into a bowl and added the Parmesan on top. Yum!
