Maple-Ginger Apple Sauce

Ingredients
- 4 small McIntosh apples, peeled, cored and cut into eighths
- 1/4 cup water
- 2 tablespoons maple syrup
- 4 quarter-size slices fresh ginger
Directions
1. Combine all ingredients in a small saucepan; cover and bring to a simmer. Cook about 20 minutes, or until apples can be easily mashed. Let cool slightly; discard ginger. Mash apples with a fork; serve. (Can be refrigerated for up to 5 days.)
