Mexican Egg Scramble

Ingredients
- 3 egg whites
- 1/4 cup canned black beans
- 1 ounce reduced-fat cheddar cheese
- 2 tablespoons salsa
Directions
1. Scramble 3 egg whites with 1/4 cup canned black beans (rinsed and drained) and 1 ounce reduced-fat cheddar cheese. Top with 2 tablespoons salsa, or to taste.









I rinsed the beans well in a small strainer & cooked all together. Not a hint of grey anywhere in these eggs. I also used half the salsa and loved this recipe. It takes 5mins and I can actually have a healthy breakfast before work. Much better than cold cereal every morning.

5/7/2011 09:16:55 AM Report Abuseto avoid the "gray eggs" scramble the eggs first until almost completely cooked, then add the beans. after i mixed in the beans i put the cheese on top, but didn't mix it, just let the cheese melt. i also used sour cream with the salsa.

I cooked the egg/bean/cheese mixture a little longer than I would normally cook just eggs because the beans and the cheese made it more goopy, so it needed the extra cooking time to dry out a little more. Kittus is right, mine looked gray-ish, not like the picture, but I thought this recipe was great and I plan on using it again!
