Black Bean Breakfast Burrito
Ingredients
- 1 and 2 egg whites
- 1/4 cup canned black beans, rinsed and drained
- 2 tablespoons salsa
- 2 tablespoons shredded low-fat cheddar cheese
- 1 small whole-wheat tortilla
Directions
Make it:Scramble eggs, beans, salsa and cheese. Fill tortilla with egg mixture.





I know this is weird but I hate eggs, always have. Unfortunately it's breakfast's Holy Grail. Any suggestions for a good subsitution.

10/31/2010 09:30:48 PM Report AbuseI just made this. WOW! That's the best burrito I've had in a looooooooong time! Healthy too! Though I don't know why they say it's 288 (calories). But I also don't know the brands they're using. Mine was around 325 (hehe, I added some extra beans). I do suggest not using a whole egg (I didn't) just use 3 egg whites, less calories that way. And it doesn't take away from the flavor! (Which was AMAZING!) That is all. -Lexi
