Pecan Spice Meringue Cookies

For pecan spice nut mixture:
  • 1 cup  pecans
  • 1 tablespoon  light corn syrup
  • 2 teaspoons  honey
  • 1 tablespoon  simple syrup (or DaVinci's Sweetener Sugar Free Syrup, available at
  • 2 tablespoons  sugar (or Splenda)
  • 1 teaspoon  salt
  • 1/4 teaspoon  ground cinnamon
  • Pinch ground clove
  • Pinch dry ground ginger
For meringue mixture:
  • 2 extra large egg whites at room temperature
  • 1/2 cup  superfine sugar


1. In a bowl, prepare pecan spice nuts by mixing all of the above, except egg whites and superfine sugar. Spread on a cookie sheet lined with parchment paper. Bake at 350 degrees F until medium dark golden brown. Cool and chop by pulsing in a food processor. Set aside. Lower oven to 250 degrees F. Beat egg whites and sugar until soft peaks are formed. Stir in nut mixture. Drop teaspoon size amount on cookie sheet lined with a fresh sheet of parchment paper. Bake for 1 hour. Turn off the oven, open the oven door slightly and allow to cool in oven overnight.

What is the difference between Simple Syrup and Corn Syrup? Wouldn't it be healthier to substitute Agave for both of these?
