Chocolate Chip Banana Nut Cookies

Ingredients
- 3 tablespoons cashew butter (available at health food stores)
- 2 tablespoons butter
- 2 tablespoons sunflower oil
- 1/2 cup + 1 tbsp. granulated sugar (or Splenda)
- 1/2 teaspoon salt
- 1 teaspoon vanilla
- 1 egg
- 1 cup all purpose flour
- 1/4 teaspoon baking soda
- 1 tablespoon flaxseeds
- 1/2 cup bittersweet chocolate chips
- 1/2 cup dried bananas, diced (not banana chips)
- 1/3 cup toasted and chopped almonds
Directions
1. Preheat the oven to 365 degrees F
2. Melt the cashew butter and regular butter together, and then add sunflower oil. Pour this mixture into a mixing bowl. Add sugar, salt and vanilla to the fats and whisk for 2 minutes. Add the egg and whisk for another minute. Set aside. Meanwhile, mix the flour and baking soda together. In a separate bowl mix the chocolate, bananas, and toasted almonds together. Give the fat and sugar mixture another whisk for one minute and then gently fold the flour mixture into it. Once it is incorporated, add the nuts, flaxseeds, chocolate and bananas. Divide into 8 portions and space 1 1/2 inches apart on a parchment-lined baking sheet.

1 cookie is over 300 calories and 18 grams of fat????How is that healthy???Oreos are better for you!
